Raspberry Lemon "Cheesecake"

INGREDIENTS
Serves 4-6
Crust:
🍦 1 tbsp smoov all-in-one vanilla cream blend
🌱 1/2 cup pitted dates
🌱 0.4 cup almonds (Just under ½ cup)
🌱 1/4 cup oats
✨ A pinch of salt
Cream:
🍰 2 tbsp smoov all-in-one strawberry shortcake blend
💕 2 tsp blush blend
🌱 1 ½ cups soaked cashews
❣️ 3/4 cups fresh raspberries
🥥 1/2 cup coconut oil
🥛 1/2 cup plant-based milk
🍁 0.4 cup maple syrup (Just under ½ cup)
🥥 1/4 cup coconut yogurt
🍋 1/4 lemon, juice and zest
✨ 1/2 tsp vanilla extract
Topping Ideas: Raspberries, Coconut shreds, Maple syrup drizzle
DIRECTIONS
1. Line a cake pan with parchment paper (or use a freezer safe dish).
2. Soak cashews in water. While cashews are soaking: Add all ingredients for crust to a high speed food processor and pulse until sticky dough forms.
3. Pour crust into the dish and press down evenly.
4. Add all ingredients for cream into a blender and blend until smooth.
5. Pour cream over crust in dish and freeze for atleast 5 hours or overnight.
6. Once frozen, store in fridge and when it’s time to serve, garnish with your favorite toppings.
